Barley Growing

A proportion of the barley is grown on the farm at the distillery. Originally optic barley variety was grown, however we now use publican, which is a more resilient variety able to withstand the wet and windy Islay weather.

Sown in early May (publican) and harvested in September.

Moisture content off the field is 18 to 20%.
Dried to 13 to 14% prior to storing.
100 tonnes of malting barley (variety - publican) is grown and malted at the distillery. This represents 30% of our annual production. The balance of malt is purchased from the Port Ellen Maltings on the island.

Both malts are kept separate throughout the production process. We now have our unique 100% Islay single malt whisky - from barley to bottling.
